Hello friends,
In this edition, we'll be covering:
Catch and Cook Lake Berryessa King Salmon
Lake-to-Table: Berryessa King Salmon
Alex and the Catch Happy crew turned a freshly caught Lake Berryessa king salmon into an unforgettable dinner - and you can, too!
Here’s how we made it:
What you’ll need:
Fresh garlic (minced)
Salt
Black pepper
Fresh rosemary
Cajun seasoning
Lemon
A drizzle of oil
Butter
Step 1 - Prep: Fillet the salmon, removing skin and any pin bones. Lightly coat with oil, then season generously with salt, minced garlic, Cajun spice, black pepper, rosemary, and a good squeeze of lemon juice.
Step 2 - Cook: Heat a skillet and sear the fillets gently until they’re perfectly flaky and cooked through.
How it turned out: Forget any “muddy” lake taste - this king salmon is clean, delicate, and delicious. The Cajun spices and zesty lemon add a gentle kick, while rosemary brings an aromatic touch. Soft, buttery, and guaranteed to win over picky eaters!
Catch Happy Tip: Don’t toss the leftover bones - simmer them into a rich fish stock or chowder base. Zero waste, maximum flavor.
